Alex Saenz, Chef

I was raised in South Carolina, surrounded by backyard barbeques and my mother's savory cooking. Influenced from an early age by the cuisine of the south, as well as by my parents' Peruvian background, I embarked on a journey to understand more about the culinary world. I began first by working at bars and restaurants in the 5 Points area of South Carolina, but found myself yearning for more.

I enrolled at Le Cordon Blue College of Culinary Arts in Los Angeles, California, and went on to work in the kitchens of Derek’s Bistro in Pasadena and at Alex restaurant on Melrose Avenue. This award-winning restaurant was owned and operated by chef Alex Scrimgeour and, under his tutelage, I prepared classic French and British cuisine while simultaneously learning rigorous technique.

After a several years in Los Angeles, I decided to drive cross-country, hoping to apply my skills in Boston. I worked with Gabriel Frasca at Spire Restaurant & Bar in the Nine Zero Hotel, and later teamed up with Gabriel again at the critically acclaimed Straight Wharf Restaurant on Nantucket. Under the supervision of Gabriel and co-owner Amanda Lydon, I learned to appreciate the value of local, organic, and sustainable ingredients. After two seasonal tours, I took the Chef de Cuisine position at Ten Tables Cambridge.

Following a year in the Cambridge location, I am now delighted to be heading up Krista Kranyak’s team at the new Ten Tables Restaurant & Bar Provincetown. With a truly integrated understanding of Ten Tables’ farm to table philosophy, I am very excited to implement this vision in Provincetown.

 

David Tobin, General Manager

Born and Raised in Brooklyn, David apprenticed At Dean & Deluca under Chef Felipe Rojas Lombardi when he was 16. Felipe taught David the love & art of food. David Moved to Provincetown in 1986 and is proud to have been a part of three amazing restaurants in town. His First job was with Franco's Hideaway where he became Franco's right hand man and general manager. David then went on to become the general manager at the Mews Restaurant & Cafe, where he was instrumental in making the Mews a year-round establishment. He spent the last 10 seasons working at Front Street Restaurant, and has been a production manager with Rafanelli Events for the past 7 years and counting.

David is very excited to become part of the Ten Tables Provincetown Team as general manager.
